If you joined us at our fantastic 2018 reunion you may have been treated to a wonderful slice of Dusan’s “Spotted Dog” damper bread that he prepared on the day and submitted into our reunion competition. It was delicious served straight off the fire with a generous helping of golden syrup.

Dusan highlighted that all the ingredients are important in this recipe, but the Cocky’s Joy (golden syrup) must not be forgotten when serving and lastly, that its very important for the cook to keep hydrated with the ½ Doz VBs mentioned in the recipe while making the bread!

Dusan’s “Spotted Dog “
Ingredients:
750g SR flour
200g sultanas
1/2tsp salt
3 slurps of Port (about ½ cup)
1 can of VB beer (at room temperature)
1 can of Coke (at room temp.)
Butter
Cocky’s Joy (Golden Syrup)
½ doz VBs for the cook !!!
Method:
Have a roaring fire going to give you plenty of good coals.
Line the camp oven with Alfoil , smooth it out and dust
with flour.
Put all dry Ingredients in a bowl. Make a well in the centre.
Add Port and 1 can of beer and mix well. Add just enough Coke
to make a soft and smooth dough using fork only- no kneading !!!!
Transfer the dough in the oven.
Spread a shovel of good coals on the ground, put the oven on top
of it and cover it with preheated lid. Put 1 or 2 shovels
of coals on the lid. You may have to add more coals under and/or
on the lid( depending on the quality of coals) to maintain a good
and steady heat in the oven.
After about 30 minutes lift the lid to check how much more
Cooking is required.
When the “dog” is cooked remove it from the oven, peel off the
Alufoil and wrap it in clean tea towel for about 10 minutes before
slicing it. Serve it while still warm with lashings of butter and a
generous dollop of “Cocky’s Joy” and serve it with billy tea “
